Carrot-Zucchini Muffins or In Praise of Fall

Fall has arrived and yet no one would know because we live in Oakland.
“The leaves are changing, the leaves are changing!” I skip and squeal with the glee of a kid in a candy shop at the sight of orange leaves on the oak trees that line the streets.
“Um….hate to break it to you B, but those are definitely just dead leaves. They just need water.”

My memories of Fall in Oregon are splashing across my mind in a montage with the background music of the Sound of Silence by Simon and Garfunkel. The air is suddenly cold, the leaves are a calico canvas of greens, reds, yellows and oranges, soup is on the stove for a gathering of friends and my spirit is in that high place that happens right before the winter crash.

Oh Oakland…I love you, but you don’t know what Fall is. So in honor of Fall (or the lack-thereof) and all of its splendor I offer up this muffin recipe in sacrifice to the gods of autumn.

These muffins are a bit of a “everything but the kitchen sink” and therefore they are delicious. Honestly what makes these so wonderful is the addition of chocolate-covered pepitas. Yes- you heard me right. Go out there and find them now, you can thank me later. If you can’t get your hands on them, just substitute some chopped up chocolate and/or pepitas. With these muffins, the more the merrier!
