A healthy lunch to power you through the day!
I'm a big fan of the grain bowl. Typically on Sunday I make a big batch of either quinoa or brown rice and then raid the veggies in my fridge to create lunches for the week. This one was particularly lovely and easy to make. The majority of the cooking time is taken up by vegetables roasting which means you're free to fill your time with whatever you might please.
